Its always said that at any given point of time there are only so many roles that one can play in life, only so many things that one can do and since I've embarked on the journey to getting healthy and fit, one of the things that has taken a backseat is blogging regularly. And even though I don't get the chance to blog that often but I am cooking more than I have cooked in a long time. A lot of it is just experimentation on how to put more protein, vegetables and flavor into the food without any extra added fat. I will share the results of my experiments one by one. For now, here is one that is extremely easy and tastes wonderful and fresh.
For this Greek Salad, you don't need a lot of ingredients but the quality of the ingredients will make all the difference. Make sure the peppers are firm and fresh, the olives are not the ones packed in a jar of salty water and the feta cheese is not so mild that the sharpness does not come through. The important thing to understand while making healthy food is what will really add flavor to food. For this salad the key flavor ingredients are dried oregano (which does not have calories at all) feta cheese, black olives and extra virgin olive oil.
I have managed to successfully eliminate the olive oil from the salad. To make it less caloric but still keep the flavor, the other method is to divide the black olives and feta cheese into small pieces that can be dispersed throughout the salad. This ensures that every bite is full of flavor without extra calories. This is a vegetarian version of the salad. Cooked chicken or prawns can also be added to this salad to make it a complete meal.
Ingredients:
1/2 cup red bell pepper (large diced)
1/2 cup yellow bell pepper (large diced)
1/2 cup green bell pepper (large diced)
1/2 cup plum tomatoes (deseeded and large diced) or cherry tomatoes (halved)
1/2 cup red onion sliced thinly
1 tsp dried oregano
1 oz feta cheese, crumbled
1/4 cup black olives, finely diced
Salt & pepper to taste
Method:
Combine all ingredients well except salt and pepper. When ready to eat, mix the salt and pepper into the salad. Serve cold.
